Condensation is simply the physical change of water physical state from a gas (vapor) to a liquid. Air holds water vapor. Warm air holds a lot of it; cold air holds very little. When warm, humid air comes into contact with a cold surface—like a cold beverage can on a hot July afternoon in Tampa, or a window pane chilled by your air conditioning—the air immediately surrounding that surface cools down. Because cold air can’t hold as much moisture, it drops its water load directly onto the cold surface.
